That's a line I've heard my whole life from all sorts of people – family, friends, co-workers, even (and I'm not making this up) vegetarians. Bacon is the perfect combination of salty, crispy, meaty goodness. It's the ultimate comfort food.
Over the last couple of years, I've worked hard at refining my bacon-making abilities: selecting the right meat, carefully curing it – everything. I've relied on techniques my southern parents have taught me, the countless experiences I've had hosting dinner parties and catering local events, and the skills I've picked up from friends who are culinary experts themselves.
But I also wanted to satisfy my adventurous side, and reimagine bacon for other foodies and bacon enthusiasts alike. Why mess with perfection? Because the control freak in me knows that even the most perfect product – including bacon! – can always be just a little bit better. From this seemingly crazy idea, I created the Cast Iron Gourmet.
A Los Angeles based company, we specialize in making small-batch bacon and bacon-inspired goodies. Small batch because most of our serving sizes are perfect for one or two people; bacon because it's decidedly delicious.
Our process is simple. First we take fresh, sustainable meat, and cure it for days. Next we take one of our hand-crafted rubs (each is made with its own unique blend of spices), and coat the meat with tons of flavor. Finally, we smoke the meat using fresh hickory wood.
