Corn Salad

Corn Salad is easy and delicious. This is the perfect summertime dish, a no-cook recipe that utilizes the flavors of the summer. The versatility of this dish is limitless. You can substitute with veggies and herbs that you have on hand. Nothing says summer like corn salad and this recipe will help you enjoy summer a bit more.

 
 

INGREDIENTS

  • 2 Corn Cobs

  • 1 Cup Tomatoes

  • 1 Large Jalapeno

  • 1/4 Cup Red Onion

  • 1/4 Cup Radish

  • 1/4 Cup Cilantro

  • 2 Tablespoons Garlic

  • Pepitas, garnish

  • Cotija, garnish

  • 2 Tablespoons Lime Juice

  • 2 Tablespoons Red Wine Vinegar

  • 2 Tablespoons Olive Oil

  • 1 Teaspoon Ground Cumin

  • 1/4 Teaspoon Ground Coriander

  • 1/4 Teaspoon Dried Oregano

  • 1 Teaspoon Ground Chili

  • 1 Tablespoon Sugar

  • Salt, to taste

  • Pepper, to taste

 

INSTRUCTIONS

  1. Remove corn kernels from the cobs for corn.

  2. Dice tomatoes, jalapenos, red onion, radish, and garlic.

  3. Chop cilantro and set aside.

  4. Add corn, diced veggies, and chopped herbs in a large bowl.

  5. Mix olive oil, lime juice, and red wine vinegar in a small bowl.

  6. Add spices, sugar, salt, and pepper to the liquid mixture.

  7. Taste salad dressing and adjust to taste.

  8. Add salad dressing to veggie mixture and mix thoroughly.

  9. Garnish with cotija cheese and pepitas.
